Almond cookies | Amaretto | Vegan-Gluten free

Hello my lovelies! I have been thinking about gatherings, when we met loved ones who have their way of life and find it difficult to adjust their food of choice to what your own might be and that's understandable. I have been to my lovely friend Ana's baby's baptize and she went above and beyond when it came to vegan options and I appreciate it so much! However not everyone know how to adapt and adjust this way so I was thinking how can we make it easier not only for ourselves but for those who love and care about us. Well we can help out by baking things ourselves and bring along not only for ourselves but to share. We are beginning with cookies.



Makes about 16 cookies.


What you need:


5dl (2 cups) fine almond flour

1 dl (1/3 cup) maple syrup

1/2 tsp baking powder

3-4 tbsp amaretto

1 tsp vanilla

1 tsp almond extract


Begin with preheating your oven to 175°C (350°F).


Add the almond flour, baking powder, vanilla in a bowl and then the amaretto,

maple syrup and almond extract. Knead until it becomes a sticky dough which

holds it's form.


On a baking tray add a baking paper, create round balls about a tablespoons worth

of the almond dough and place them on the sheet make sure you have space between

them as we are going to flatten them out. I used a cookie cutter to get the round

shape by pressing it down and circling the cutter to even out the edges.If you don't

have one use the bottom of a glass and flatten it out I would recommend placing a small

piece of baking paper between as the dough might stick to the bottom of the glass.


Feel free to decorate the cookies before they go into the oven I used a toothpicks

to create stripes and I loved how they turned out.


Bake in the middle of the oven for about 12-14 minutes and allow them to cool before

serving.
