Bubble tea | Vegan-gluten free

Uppdaterat: 9 mars 2021

Hello my lovelies and welcome back after the weekend! Like I mentioned last week I have been in a state of wanting comfort, relaxing with soul food and contemplating on life and as I did share a few comforting stews last week I wanted to share a few comforting drinks both hot and cold and today we are making bubble tea. Not only because tea is wonderful on it's own but these little bubbles add more flare to the traditional cup of tea.

What you need for the bubbles:

3 tbsp tapioca flour

1-1 1/2 tbsp freshly boiled water

Food colour I used yellow, green, blue, red violet

(The usual colour would be black)

5 dl (2 cups) of water for boiling

2 dl (0.8 cups) of water for cooling per bowl

2 tbsp sugar per bowl

I made four different colours so I made four batches for two servings of tea.

Boil the water while you measure out the tapioca flour into a bowl.

Mix the food colouring into the water and pour it into a well in the tapioca flour and mix with a fork until it begins to stick together.

Knead until smooth and roll out on a flat surface forming long sticks then cut them into small pieces which you roll into small pearls.

In a small pot boil 5 dl (2 cups) of water bring to medium heat and add the pearls into the water and boil for 15-20 minutes. Remove from the heat and allow to cool before transferring into a bowl with sugar to prevent them from sticking.

Now for serving boil tea of your choice. Into a cup add the pearls and then pour in your tea. I added a few scoops of whipped cream on top as I enjoy milk in my tea a lot and this added that flavour.
