Hello my lovelies! As I stated on Monday I wanted to find more options for substitutes for meat and last recipe we made steak and today we are making chicken fillets.

A big reason why I wanted to make this is because there are dishes I remember fondly and my loving mother have put her heart into many dinners that I often crave and one of them is her chicken stew which I am hoping to recreate if these turn out good. I'll let you in on a secret, they did! I will share the recipe on my mum's stew later on so look forward to that.

Makes about 4-6 fillets.

What you need for tofu chicken:

400g medium firm tofu

What you need for broth:

1/2 litre of water

1 vegetable stock cube

1 tbsp mushroom powder

Salt to taste

What you need for chicken seitan:

3 1/4 dl (1 1/2 cups) wheat gluten

300g silken tofu

2 tbsp water

2 tbsp nutritional yeast

1 tbsp onion powder

2 tsp vegetable broth

1 tsp garlic powder

1/2 tsp salt

This is not gluten free.

To get a texture that resembles chicken we need to thaw the tofu, do not open the package just place it in the fridge to freeze then thaw, freeze and thaw once more. Then open the package and and press the water out.

Next we can get onto making our broth add the water into a pot and bring to a boil then add the vegetable cube and mushroom powder and boil on medium high heat. Add in the tofu to the broth and cook for for 30 minutes then take off the heat and allow to cool.

In the meantime we can get onto making the chicken seitan, in a bowl add the wheat gluten, seasoning and silken tofu and mix together not until fine but enough to hold together. Then add the water and broth and knead the dough for 10 minutes.

Divide the dough and tofu into four equal pieces and onto a flat surface roughly flatten the dough out into a square. Tear the tofu and add into the centre of the dough and pinch the dough together and shape into a fillet. It should make four fillets.

I used what was left of the broth for the steaming so into a pot I poured the broth and water and placed the steamer in and gave it a brush of olive oil so the fillets won't get stuck.

Once the water is simmering and add the fillets onto the steamer and steam for 20-25 minutes.

Once done allow to cool, you can either cook and eat immediately or freeze them in for another time.
