Chorizo sausage | Vegan-gluten free

Happy Friday my lovelies! I wanted to give it a shot and make my very own chorizo sausages as I do use them on a regular for my green curry and recently for my hot dogs.

I have been tweaking on this recipe a bit until I managed to get the flavour and consistence I enjoy and of course I wanted to share it with all of you! I would say these turned out medium spicy so if you want less or more I would adjust the amount of chilli and cayenne pepper.

Makes about 6-8 sausages.

What you need for batter:

450g broad beans

1/2 dl (0.2 cups) sunflower oil

1/2 dl (0.2 cups) corn flour

1/2 dl (0.2 cups) vegetable stock

1 dl (0.4 cups) rice flour

8-10 mushrooms

2-3 garlic cloves

1-2 tbsp lemon juice

1 small onion

What you need for spices:

3 tbsp paprika

1 tsp white pepper

1 tsp coriander

1 tsp cayenne pepper

1 tsp cumin

1 tsp nutmeg

1 tsp ginger

1 tsp chilli pepper

1 tsp salt

1 tsp allspice

Bring water to a boil and add the broad beans and allow to boil for 10-20 minutes.

Pour out the water and set aside to cool.

Now for the vegetable stock I use vegetable cubes so I will boil water and add the cube in to dissolve it's best to do this before hand so it can cool before we get on to the next step.

Next clean the mushrooms set two of them aside and roughly chop the rest and the onion.

Get your food processor ready, add the beans, vegetable stock. onions, garlic, lemon juice and oil and blend next add the remaining ingredients and spice blend leaving two mushrooms that we will use later. Blend until smooth and transfer into a bowl.

Now chop up the two mushrooms and add them into a pan to fry them off. I do this because I enjoy the extra texture it adds in the sausages. Mix them into the sausage batter and add rice flour and mix until combined then place in the fridge to cool or freezer.

Once cool it's time to shape them into sausages I use tinfoil to shape them as it not only

makes it easier to shape but also due to being able to boil them so they hold their shape.

Bring water to a boil and add the sausages and boil on medium high heat for 15-20 minutes.

Now you can of course fry them off and eat them right away or simply freeze them in for another time.
