Cinnamon toast cereal | Vegan

Hello my lovelies! You might recall that I mentioned where my inspiration for this months theme came from and of course I had to make some cinnamon toast cereal! I have been craving it for such a long time and to finally get my hands into creating these to sate said craving is long overdue. Let's bake some breakfast foods!

What you need for cinnamon toast cereal:
5 dl (2 cups) flour
1 dl (0.4 cups) water
130g room temperature butter
1 tbsp cinnamon
2 tbsp vanilla powder
1/2 tsp salt
4 tbsp melted butter (for brushing)
What you need for coating:
1 1/2 dl (0.6 cups) sugar
2 tbsp cinnamon
Serves 4-6 people.
Begin with preheating your oven to 175°C (350°F)
Let's prepare the coating, in a bowl add the cinnamon and sugar and fold them together until the sugar appears coated with cinnamon and set aside for now.
In a food processor add the flour, cinnamon, salt, butter and pulse until looks like marbles. Now add the vanilla and water little by little while pulsing in-between. If it feels a bit too dry add a couple of tablespoons of water and pulse until it comes together.
Coat a flat surface with flour and roll out the dough as thin as possible I'd say about 3mm.
Transfer the dough onto a baking sheet, brush it with melted butter and dust it with the cinnamon-sugar coating (about half of it) and gently press the cinnamon-sugar into the dough.
Flip the dough over, slice into squares about the size of 2 cm each side before coating it with the rest of the cinnamon sugar coating.
Transfer the sheet onto a baking tray and pop into the middle of the oven for 10-15 minutes. They should look lovely and golden once they're done.
Allow to cool and keep in a container for up to a week.
Serve in a bowl with milk and fresh berries if you wish.
