Corn Ribs | Vegan | Midsummer
Hello my lovelies! So I love spring and summer and if when it comes to food surely BBQ food has to be high-ranking when it comes to that challenge. Today I wanted to try my hands on a dish that I have seen surfing around the web, which are corn ribs. They look divine.

What you need for corn ribs:
4 corn on the cob
1/2 dl (0.2 cup) BBQ sauce
2 tbsp olive oil
1 tsp paprika powder
1/2 tsp cumin
1/2 tsp salt
What you need for topping:
50g vegan butter
75g vegan parmesan
A sprinkle of fresh herbs such as parsley
What you need for dipping:
1 dl vegan mayonnaise
1-2 tsp sambal oelek
On a cutting board we will slice our corn, first cut it lengthways and then cut the halves in the centre and then those halves should be sliced as well. You should get 4 ribs from each corn on the cob.
I am going to cook mine on the stove but you can of course cook them on a BBQ.
Bring a pan up to medium high heat and pop them into the pan. Fry them until they get a lovely sear, rinse and repeat until they are all fried.
In a bowl add BBQ sauce, olive oil, paprika powder, cumin and salt. Give it a mix and pop the corn into the marinade and coat them generously.
Then sprinkle the parmesan, herbs and butter onto the corn and massage it in.
Mix together mayonnaise and sambal oelek for a lovely dipping sauce. Now it's ready to be enjoyed!
