Hello my lovelies! Welcome back to another year of vegan dining, I am so happy that I am going into the next year with my vegan diet and lifestyle. It has been so much fun implementing it even more so and blossoming my creativity and backbone as far as vegan dining goes. I don't know about you but I don't make New year resolutions I do of course think ahead of things I want to accomplish but setting it as a yearly target isn't something I find very healthy for myself. Taking each day as they come and nourishing my creative side has been life altering, I don't hold onto grudges as that only sours my mind and it's better to move forward if possible. I want to thank all of you for being with me this year and allowing me to be with you. I wish you all a happy New year and look forward to entering next year with all of you lovelies. Let's make New years dinner together!

What you need for Crème Ninon:

1/2 litre vegetable broth

1 dl (0.4 cups) champagne

200g green peas

20 french beans

20 wax bean

10 string bean

1 shallot

Olive oil

A handful of mint

A pinch of salt and pepper

What you need for farmers bean cream:

10 farmers bean

1 onion

50g butter

1 tsp salt

2 dl (0.8 cups) water

A pinch of salt and pepper

Serves 4 people.

Below you can follow along my video upload on how to cook this and use the instructions below to help guide you along.

Begin with washing the beans and pinch of the ends and set aside.

Bring a pot with water and salt to a boil and pop the beans in to cook for 2-3 minutes then pour them into a cold bath to cool down.

In a deep pan add olive oil and bring to medium high heat, slice the shallot and add into the pan. Fry until the shallot become translucent and then add the green peas and champagne. Add the vegetable stock and bring to a boil.

Add half of the mint then set aside to cool. Once cool add it to a food processor and blend until smooth. Add salt and pepper to taste.

Now for the farmers bean cream, clean the beans and slice them in rough pieces.

In a pot add half of the butter and bring to medium high heat while we peel and chop the onion.

Add the onion into the pan and fry until translucent now add the beans, salt and water and boil on high heat for 4-5 minutes. Allow to cool then add it into a mixer along with the butter, salt and pepper and blend until smooth.

Now to serve, fry off the beans slightly in a pan with a splash of olive oil add the rest of the mint. Pour the Crème Ninon into a bowl, spread out the various beans into the bowl and top off with the farmers bean foam.
