Crepes | Pancakes | Vegan

Hello my lovelies and happy Wednesday! I hope you are all doing well my wonderful Shadefooders! If you have been keeping tabs the past weeks we have been making traditional Swedish food and on my recent YouTube upload I made pea soup and something that might seem odd is the combination of eating pancakes along with soup but that is just how we roll around here. Eating pancakes with pea soup started at the late 1700 and was commonly eaten by wealthy people as a dessert and we to this day eat this along with pea soup and to compliment our traditional dishes this is part 3 of this month! Let's make pancakes!

Makes about 10-12 pancakes.

What you need for pancakes:

3 dl (1.2 cups) flour

6 dl (2.4 cups) vegan milk

1/2 dl (0.2 cups) aquafaba

4 tsp vanilla sugar

1 tsp baking powder

1/2 tsp salt

Butter for frying

In a bowl add the dry ingredients and then add the milk, aquafaba and whisk until smooth.

In a pan add butter to coat and bring it up to medium high heat, once the it's brought to temperature add about 1 dl (0.4 cups) of the batter and move the pan around to coat it in a full circle.

Once the batter starts releasing on the edges you should be good to be able to flip the crepe over.

Serve with some fresh berries, jam and whipped cream.
