Marinated mushroom salad | Vegan-Gluten free

Hello my lovelies! It's the start of a new week and next week I am taking a big step in regards of my journey to recovery. Like I have hinted before I will make a video speaking on this matter but for now I am staying focused and thinking about something I will be thinking more about in the regular and that is lunch. I want to focus on things that are easier to make and that you can meal prep and today we are making a mushroom salad.

What you need:
250g brown wood mushroom
1-2 cloves of garlic
3/4 dl (0.3 cups) olive oil
1 tsp smoke paprika
2 tbsp chopped red onion
1 tsp onion powder
A pinch of salt
A pinch of ground white pepper
Chopped chives when served
Begin with washing your vegetables, slice the mushrooms in half, chop up the chives, red onion and mince your garlic.
In a bowl add the olive oil, minced garlic, smoked paprika, onion powder, salt and white pepper. Mix until combined and now add in your mushrooms and coat them properly.
I tend to let this sit in the fridge either over night or for a few hours as the mushrooms absorb more of the flavour that way.
Lovely to eat on it's own or as a side dish, add some chopped chives before serving.
