Nougat treats | Vegan-gluten free

Happy Friday my lovelies! Of course we need to add some treats into the birthday celebration and I intended to simply make one flavour first but ended up making a sea salt & nougat flavour one and a white chocolate & coconut flavoured one and I have to admit these are some of my favourite flavour combinations. This treat adds a crunchy and smooth texture which is lovely and it's easy to make it into bite sized treats if you wish.
What you need for cake:
7 dl (2.8 cup) rice puffs
1 dl (0.4 cup) almond flour
1 dl (0.4 cup) coconut flakes
1 dl (0.4 cup) light syrup
1/2 dl (0.2 cup) cacao
1/2 dl (0.2 cup) sugar
2 tsp vanilla sugar
What you need for nougat:
1 dl (0.4 cup) vegan cream
150g vegan nougat
Sea salt for decoration
I also made one with white chocolate:
1 dl (0.4 cup) vegan cream
150g vegan white chocolate
Coconut for decoration
In a bowl add all the ingredients for the cake and fold until combined. Then into spring mould of your choice ( I use a round shape) press in the batter about half way up and place in the freezer to set while we get on with the next step.
In a pot add the cream and nougat and on medium high heat allow the nougat to melt while stirring. Once melted take of the heat and let it cool before pouring the nougat into the spring mould from earlier topping them off I left some of the nougat and used it to decorate the white chocolate version one and if you want to make two as well you should do the same.
If you want to make the white chocolate version proceed with the step above and set some white chocolate aside for decorating the nougat flavoured one.
Place them back in the freezer for at least two hours. When you are going to serve them gently pop them out of the mould and give a light sprinkle of sea salt on the nougat one and coconut flakes on the white chocolate one and decorate with chocolate and nougat to your own liking and it's ready to serve. I cut mine in slices but they do end up lovely in squares too.
