Pancake cereal | Vegan

Hello my lovelies! If there is one food item that is a staple of breakfast food it has to be the classic pancake. It is such a treat to have in the morning and recently it had dawned on me that the wonders of peoples mind have come up with the idea of eating pancakes like a breakfast cereal and I am here for it! Of course I wanted to try my hands on these wonderful mini pancakes and make them vegan.

What you need for pancakes:
2 dl (0.8 cups) flour
2 dl (0.8 cups) vegan milk
2 tsp vanilla sugar
1 tsp baking powder
1 tsp baking soda
1 tbsp nut butter
1/2 tsp salt
Butter for frying
Serves one.
In a bowl add the dry ingredients and then add the milk, nut butter and whisk until smooth.
In a pan add butter to coat and bring it up to medium high heat, once the it's brought to temperature and then pipe batter onto the pan creating several mini pancake about a teaspoon of batter to each pancake.
Fry them until they become golden and flip them over.
Serve them in a bowl with milk and maple syrup. They will stay fresh for 2-3 days in a fridge.
