Pickled red onion | Vegan-Gluten free

Hello my lovelies! Wanted to update this blog with a few words I just am about adding a personal touch. I do enjoy pickled vegetables and one of my pleasant experienced of pickled vegetables was when I visited Poland and met one of the sweetest women I've come across and despite our language barrier we could understand one another due to our passion for food. She showed me her pantry full of pickled and fermented food all in which she made herself. It was beautiful and most of all it was a bliss to favour some of it.

What you need:
2 big red onions
1 dl (0.4 cup) sugar
1/2 dl (0.2 cup) vinegar
1 dl (0.4 cup) water
Begin with slicing your red onions thinly and set them aside.
In a pot pour your water and vinegar in and bring to a boil add your
sugar and stir until dissolved.
Take the pot off the heat and add your
onions and let them sit in there until cool. Once cool add to a container
I prefer a mason jar.
