Potato pancakes | Potatisplättar | Vegan

Hello my lovelies and happy Wednesday! I'll have you know how incredibly nostalgic is it recreating these dishes, it brings me back to school. It's finally lunch and it's Thursday and everything inside you know that there will be traditional lunch and oh how yummy it would be. As you might have guessed today's recipe is the second part to our previous upload and today we are making potato pancakes! I have to admit it took me quite some time before I came around to enjoy these, I was the odd one out that looked forward to the black pudding and lingonberries but as an adult I have come to appreciate this dish wholeheartedly.

Serves 4-6 people.

What you need for the potato pancakes:

500g potatoes

1 dl (0.4 cups) vegan milk

1 dl (0.4 cups) imat

4 tbsp nut butter

2 tbsp flour

1 tsp baking powder

A pinch of salt

A pinch of nutmeg

4-5 tbsp butter

In a bowl add milk, cream, nut butter, flour, baking powder and seasoning and whisk until smooth. Rinse and peel the potatoes. Grate them either by hand or in a food processor.

Add in the potatoes and fold them in coating them fully in the milk mixture.

In a pan add the butter and bring to medium high heat and once brought to temperature add a large spoonful of the batter and fry until they become golden brown on each side.

Serve with lingonberries! Of course enjoy this along side last week's recipe.
