Hello my lovelies! This week I found myself thinking about comfort and how being wrapped up like a burrito in a blanket with a comforting drink would keep me content beyond anything. On Monday we made tea but today we are making hot chocolate!
Serves 2 people.
What you need hot chocolate:
6 dl (2.4 cups) vegan milk
1/2 dl (0.2 cups) sugar
100g chopped vegan dark chocolate
2 tsp red food colour
1 tsp vanilla
What you need for whipped cream cheese:
1/2 dl (0.2 cups) vegan whipped cream
200g vegan cream cheese
1 dl (0.4 cups) sugar
1/2 tsp vanilla
A pinch of salt
Serves two or one large mug.
In a bowl add cold cream cheese, sugar, vanilla and salt and whisk until smooth creamy. In another bowl whisk vegan whipped cream until you get soft peaks then fold in the
whipped cream into the cream cheese mixture until it looks fluffy. Set in the fridge while we get to making our hot chocolate.
Add vegan milk and sugar into a pot and bring it to a simmer on medium high heat while stirring so it won't burn until the sugar have dissolved.
Take the pot of the heat and add the chopped chocolate and whisk until it's melted.
Add the vanilla and food colouring and whisk until combined.
Serve in cups and top off with whipped cream cheese and some finely chopped dark chocolate.
