Ribs with Asian flavours | Vegan-Seitan

Uppdaterat: 9 mars 2021

Hello my lovelies! I had a few weeks back made a couple of recipes on vegan substitutes for meat. I know we all have different opinions on this but I feel that encouraging people to eat vegan by means that work is better than discouraging and will help guide some of us in that direction. It is food after all and finding dishes that brings harmony and joy is a great goal!

Serves 4 people.

This is not gluten free.

What you need for ribs:

3 1/4 dl (1 1/2 cups) wheat gluten

300g silken tofu

2 tbsp nutritional yeast

1 tbsp tahini

1 tbsp soy sauce

1 tbsp hoisin sauce

1 tsp liquid smoke

1/2 tsp Chinese five spice

2 tsp white pepper

2 pieces star anise

1 tsp cloves

2 tsp fennel

2 tsp cinnamon

Rib marinade

1,1 dl (1/2 cup) hoisin sauce

4 tbsp (1/4 cup) soy sauce

2 tbsp agave

1/2 tsp Chinese five spice

1/2 tsp garlic powder

1/4 tsp ginger powder

Red food colour

Let's begin making the seitan ribs, in a bowl add the wheat gluten, seasoning and silken tofu and mix together not until fine but enough to hold together. Then add tahini, soy sauce, hoisin sauce and liquid smoke and knead the dough for 10 minutes.

Place the ribs in the middle of the oven at 175°C (350°F) and cook for 20-25 minutes.

While it's in the oven we will get to making our marinade add hoisin sauce, soy sauce, agave, Chinese five spice, garlic powder, ginger powder and red food colouring into a bowl. Stir until it's combined. The red food colouring will add that colour we associate with ribs but it isn't necessary.

Next take the ribs out and give a generous coating of the marinade and place in the oven for 10 minutes and then repeat with one more coat for another 10 minutes.

Now it's ready to be eaten, I served mine with corn on the cob and sweet potato fries.
