Roasted almonds | Vegan-Gluten free | Christmas

Hello my lovelies and welcome to the fourth week of Christmas! This week we are getting into the wonderful evenings of candy production and as many of you may know I live in Gothenburg and living in a city really brings loads of opportunities and during this time of year we have many beautiful Christmas markets but one that comes to mind is Liseberg which is a large theme park that celebrate different Holidays with their correspondent theme and each year they really knock it out of the park. During this season there are stalls everywhere full with decorations, food, crafts, treats and so much more and one of these stalls that pulls me in with the beautiful scent in the air is the candied nuts stall. It really is the scent of Christmas in the air and I honestly wanted to bring that scent into my kitchen as well and here we are, let's make roasted candied almonds!

Roasted almonds:

200g almonds

2 dl (0.8 cup) sugar

1/2 dl (0.2 cup) water

Add the almonds into a pan and roast them on medium high heat and once they have roasted enough increase the heat and add the sugar and water.

Allow it to boil while stirring constantly, once the sugar becomes white and the almonds appears to be popping they are ready to be transferred onto a baking sheet.

Make sure you leave space between the almonds so they don't get stuck together while the cool. You can dust them with additional sugar and/or cinnamon once they've cooled a little for extra flavour and decoration if you wish.

Once completely cooled they are good to serve. I enjoy pouring them into a jar and set on the table as it looks lovely and inviting.
