What you need for crust:
2 1/2 dl (1 cup) red velvet cookies ( the recipe can be found through my Patreon )
6 tbsp butter
1 tsp cinnamon
What you need for cream cheese filling:
250g cream cheese
5 dl (2 cups) whip cream
1 1/4 dl (0.6 cups) icing sugar
3 tbsp sugar
1/2 tsp vanilla sugar
What you need for berry filling:
590g raspberry jam

In a blender add the cookies, butter and cinnamon and mix until combined.
Set aside 3-4 tbsp of the crumbs as we will sprinkle this on top.
Pour the remainder into a baking pan the size of 22-22 cm about 9 x 9 inch
and press the crumbs along the bottom of the pan.
Pop it into the fridge to set while we make the fillings.
In one bowl add the cream cheese and icing sugar and using a hand whisk,
whisk until it becomes softened and combined.
In a different bowl add the whipping cream, sugar and vanilla sugar.
Whisk until the cream have stiff peaks.
Add the whipped cream into the cream cheese mixture and fold in gently.
Spread about half of the cream cheese filling evenly over the crust.
Next gently spread the raspberry filling evenly.
Add the remaining cream cheese filling and spread it evenly over the
raspberry filling.
Sprinkle the top with the red velvet crumbs you set aside.
Pop into the fridge for a few hours or overnight.
