Tofu sesame & panko bread hamburger | Vegan-Gluten free

Hello my lovelies! Friday has finally come and as I stated early this week we were making a few recipes that would add up to this one and now here we are. Most of us look forward to the weekend because that means time for life and why not start it off with a lovely hamburger. I also want to give credit to Gaz Oakley also known as avantgardevegan as he inspired me to do my own take on his dish.
Serves 4 people.
What you need for tofu:
400g firm tofu (check that yours is gluten free)
5 tbsp tapioca flour
40g gluten free panko breadcrumbs
10g sesame seeds
4 tbsp of gluten free flour mix
Vegetable oil for frying
Pickled red onion (see blog)
4 burger buns (see blog)
Vegan mayonnaise (see blog)
1 tsp coarse black pepper
1 tsp sea salt
Rapeseed to coat
Preheat the oven to 200 °C ( 345 °F ) Wash and peel the potatoes and slice them into wedges. In a baking tray coat with the oil. add seasoning, pop the wedges in and massage them until coated. Place the tray in the middle of the oven for about 40-60 min.
Begin with pressing your tofu, it needs to be dry before we coat it in our panko.
Then slice it into 4 pieces we want them as flat and as long as possible, then measure out each dry ingredient to begin with so it will be easy to assemble our tofu burger.
Mix the tapioca with water and make sure it looks like a thick batter as it will help us coat the tofu. The panko breadcrumbs and sesame seeds should be mixed together as well. I use one hand for the dry and the other for the wet as it makes less of a mess.
First coat the tofu in the gluten free flour mix then dip it in the batter next coat it with the panko and sesame seed mix and set side and repeat with the other three.
Now for frying pour enough vegetable oil into a high pan so it reaches
about 1 cm (0.4 inches). Set the heat on medium high and then place in your
tofu fry until it starts becoming golden and then turn it over.
For serving you can find the recipe for vegan mayonnaise, burger buns and
pickled red onion by clicking them. The others is simply chopping the chives,
lettuce and slicing the cucumber.
I did add more flavour into the mayonnaise as the recipe is for a natural mayonnaise and I wanted a bit more flavour. I added 1/2 tsp curry powder a pinch of cayenne and onion powder.
Assemble the bun: start with lettuce vegan mayonnaise then pickled red onion,
tofu burger, cucumber and chives. I served it with some roasted potatoes.
