Trifle | Vegan - Gluten free

Hello my lovelies! This past month has been packed with traditional English home cooked meals and to finish off this months theme we will of course add something sweet and a dessert that comes to mind when I think about English food it would have to be that one famous scene in Friends where Rachel makes a trifle that is out of this world. Come to think of it... there was shepherds pie in her trifle as well, perhaps I was more inspired than I realized. I am chuckling to myself, either way let's make trifle!

Serves 4 people.
What you need for mousse: 5 dl (2 cups) vegan whip 2 1/2 dl (1 cup) vegan cream cheese 4 tbsp sugar 175g vegan white chocolate What you need for filling: 1 litre strawberries 2 tbsp sugar Lemon zest from one lemon 20 cookies ( should resemble butter cookies) 2 tbsp grated chocolate Begin with adding the cream and sugar into a bowl and whip until soft. In a separate bowl add the cream cheese and whip until it softens. In a pot add the white chocolate and melt it on low heat once melted pour it into the cream cheese and whisk until smooth. Add the whipped cream fold it into the cream cheese mixture and allow to cool down in the fridge.
Rinse and remove the greens of the strawberries, slice the strawberries and add them into a bowl. Zest the lemon onto the strawberries, add the sugar and fold it all together. I prefer layering my trifle in a large serving bowl you can of course make smaller ones if you wish. First and last last layer will be the white chocolate mousse, so mousse, cookies, fruit, grated chocolate and rinse and repeat.
Scoop up in a bowl and enjoy!
