Sandwich cake | Smörgåstårta | Vegan-Gluten free

Hello my lovelies! It's Friday and I wanted to share a cake we eat here in Sweden during festive or celebratory gatherings. I honestly love this cake and when I have loved ones over for a party I love serving this and now I have finally adjusted it to my vegan lifestyle.
This cake is loaded with toppings and usually it is a lot of seafood and with a few ingredients I have made my own version of skagenröra which is a mixture of ingredients mixed into mayonnaise.

What you need:
Skagenröra:
1 red onion
200g firm tofu
1/2 cucumber
1/2 lemon
1 1/2 dl (0.8 cups) vegan mayonnaise
75g seaweed caviar
Salt and pepper to taste
Peel and finely chop the onion, cucumber and dice the tofu in small pieces and zest the
lemon. Now mix the mayonnaise, onion, lemon zest, horseradish and seaweed caviar until combined and add salt, pepper and lemon juice to taste.
What you need for avocado mixture:
2-3 avocados
3 tbsp grated fresh horseradish
1 1/2 tbsp lemon juice
2 tbsp olive oil
A handful of dill
Salt and pepper to taste
Begin with peeling the horseradish and grate it next slice and remove the core of the avocado and scoop out the rest and mash the avocado together with the horseradish and olive oil. I use a food processor to make it smoother. Season with salt, pepper, chopped dill and lemon juice.
What you need for topping:
Vegan ham
Vegan cheese
Seaweed caviar
Cherry tomatoes
Lemon
Cucumber
Dill
Whipped vegan heavy cream
The bread I used for layering you can find here. I layered the skagenröra then the avocado mixture, skagenröra and coated the outside with the avocado mixture. Then I decorated it with various toppings in which you can find above and more skagenröra.
