Marmalade two ways and a jam | Vegan-Gluten free

Happy Friday my lovelies! I hope your week has been well mine has been full with creativity, friends and family. Like you know I have been struggling a lot recently and I will either blog or make a video about that so you can get a better understanding to my journey so far. Either way! Today I wanted not only share more sandwich spreads I also wanted to share the jam I eat together with my pancakes. Living up to my word! So I love marmalade I used to eat orange marmalade often as a child and as an adult I honestly became very lazy and went for simpler things such as butter and cheese. Time to change that!

What you need for orange marmalade:
250g of oranges
3 dl (1.2 cups) water
4-5 tbsp maple syrup (or sugar)
A pinch agar agar
Juice of half a lemon
What you need for lemon marmalade:
250g of lemons
3 dl (1.2 cups) water
4-5 tbsp maple syrup (or sugar)
A pinch agar agar
Juice of half a lemon
Do bare in mind this marmalade is more sour than most are used to, it's the way I enjoy it so if you want it sweeter add more syrup or sugar. Both of the marmalades are made with the same methods.
Begin with washing and slicing your oranges (lemons) and put a pot on with the water to bring to a boil whilst juicing your oranges (lemons). Add the juice and peel into the boiling water and allow to cook until you can easily pierce the skin under a lid.
Next take out the peel only from the pot and allow to cool and once cool remove as much of the pith as you can before slicing the peel in strips. Pith has a very bitter taste.
Once sliced add them back into the pot along with the syrup (or sugar) and lemon juice and boil for 10-15 minutes without a lid. Then add the agar agar and stir until combined and once thickened up pour it into container.

What you need for the jam:
125g frozen blueberries
125g frozen raspberries
3tbsp chia seeds
2-3 tbsp maple syrup
1 tbps lemon juice
1 tbsp water
Add your frozen berries into a pot and cook on medium high heat for a couple of minutes and stir in between. Gently crush the berries with a fork, the consistency is up to you.
Now add the chia seed, lemon and maple syrup and cook for another couple of minutes while stirring. Take off the head and allow to cool it will thicken more as it cools. Pour into a container and store in the fridge.
