No bake cheesecake | Vegan-Gluten free

Hello my lovelies! On the topic of things cheese related that we spoke of a while back I am a big fan of cheesecake and my go to when my cravings kick in is the no bake cheesecake. It's quick, easy and delicious! You can change it up a lot to suit your flavour palette with different berries and even flavour the cheesecake with for example chocolate. Just get creative! Here's my take on it.

What you need:

200g Vegan cream cheese

1/2 dl (0.2 cups) Sugar

3/4 dl (0.3 cups) Whipped soy cream

1/2 tsp Vanilla powder

2 vegan cookies, I used oatmeal cookies

For topping and layers:

A handful or two strawberries

A handful or two blueberries

A handful of raspberries

I used edible food colouring for the layers, I get mine here

You will require two bowls one for whipping the soy cream together with the vanilla powder until firm and one for the cream cheese which you with together with the sugar until incorporated. Scoop the soy cream into the cheese mixture and gently fold the two together, it's important to fold since we want it fluffy. Once your done with that you can add the food colouring if you want, I separated the cheesecake into 3 bowl and coloured two of them with pink and purple.

Now for layering, crush the cookies into a fine crumble and begin the first layer with a scoop of the cookies next add sliced strawberries and top it off with cheesecake. Now add the blueberries and scoop on some cookie crumble and next the new shade of your cheesecake then add the last shade of your cheesecake and top it off with strawberries, raspberries and blueberries.

Serve it cold.
