Pancakes | Vegan-Gluten free

Good morning my lovelies!

I as many others here in Sweden grew up with the infamous sandwich. I do love myself a good sandwich but growing up and taking charge in my own food consumption I found myself seeking variation and pancakes are definitely one of those staple breakfast foods. However when I begun transitioning to veganism I had to stop and think about how you can make a tasty one without the dairy and eggs. This is my take on vegan pancakes.

Makes 10-12 pancakes.

What you need:

3 dl (1,2 cup) gluten free flour

2 dl (0.8 cup) almond flour

1 tbsp baking powder

1 tbsp sugar

2 tsp vanilla sugar

2 1/2 dl (1 cup) vegan milk

1 1/2 dl (0.6 cup) water

Some vegan butter for frying.


Maple syrup

Whipped soy cream ( or oat works too )


I first measure out the wet and dry ingredients, the wet in one container and the dry in a bowl. There isn't much technique to mixing this which is a bonus for a breakfast recipe. Simply take out your electric hand whisk and start pouring the wet into the dry while whisking.

When your batter looks smooth this is where we move over to frying. I have gotten a beautiful cask iron griddle for Danish pancakes from my lovely mother and I love using this for American style pancakes as they all turn out evenly. You can of course just pour out the batter with a measurement tool to get as even pancakes as possible on a regular pan. I use a measurement of one tbsp for my pancake batter for frying in my griddle so perhaps that will work out fine in a pan too.

You will note that small bubbles appear in the pancake while they are frying and that is a good time to turn them over, they need less time on the turned side then when you pour the batter in. Simply stack the pancakes on a tray and repeat.

For serving I try and use a few different sides as it gives variation and is simply over all lovely for starting up your day. I will put up how I make my jam shortly, so stay tuned!
