Happy Wednesday my lovelies! It's the middle of the week and this is usually when I start feeling that it's halfway through the work week and if you're anything like myself I enjoy a lovely pick-me-up. Luckily I got a fantastic waffle-maker /grill for Christmas that I have been longing to put to use and today's the day! Let's make some lovely, crisp waffles with a berry compote and a dollop of cream! Check out my video below.
Serves 4 people.
What you need for waffles:
2 dl (0.8 cups) mineral water
2 1/2 dl (1 cup) vegan cream
4 dl (1.6 cups) flour
1 tsp baking powder
1/2 tsp salt
2 tbsp sugar
50g butter (for baking)
What you need for berry compote:
300g mixed berries
1 dl sugar
1 tsp vanilla sugar
1 tsp tapioca flour (if you wish to thicken it more)
In a bowl add flour, sugar, salt, baking powder and whisk until combined. In a separate bowl whisk the cream until thick and then fold it into the flour mixture.
Allow the batter to swell a little while the waffle iron is brought to temperature.
Coat the iron with some butter and then add about 1/2- 1 dl (0.2-0.4 cups) batter and bake them until golden brown.
Add berries, sugar and vanilla sugar in a pot and bring it to a boil on medium high heat and allow to boil for 5 minutes with a lid on. Now add the tapioca and give it a stir until the compote has thickened.
Serve the waffles with the compote and a dollop of whipped cream.
